Summary
To lead subordinates in all aspects of food production to the highest professional standards and in accordance to the standard operating procedures as issued by the Brand Management, with the coordination of Head Chef. To have strong knowledge and leadership skills in running the kitchen operations to which he / she is assigned in accordance to the guidelines given to him / her by the Head Chef. Trains the production staff as per The Brand standards and follows up on their performance during their day-to-day operations, supports the Head Chef actively all tasks given.


Responsibilities


  1. Displays good teamwork attitudes towards the colleagues.
  2. To lead subordinates, recommends and suggests measures and actions to the Head Chef.
  3. Acts on issues and concerns in the field of activity immediately.
  4. Maintain an excellent reputation in front of the guests and the staff.
  5. Ensures that the reputation and image of the shop operations is retained and improved at all times by referring to the Head Chef.
  6. The working hours are in accordance with the established duty roster issued by the Head Chef. He/ She is expected, in exceptional cases, to support the department by extending his / her duty hours until such time that the emergency is solved.
  7. Attends the daily kitchen briefings.
  8. Trains staff up to standards.
  9. Responsible for the proper briefing of the service staff when assigned in outlets.
  10. Ensure proper handling of equipments preventing losses and damages to assets and goods.
  11. Ensures proper scheduling of staff in accordance to the expected work-load after getting the approval of Head Chef.
  12. Ensures proper regular training of his staff with the objective to maintain and improve the standards of food production with the support of Head Chef.
  13. Ensures and enforces the highest standards of sanitation and hygiene.
  14. Co-responsible, with the Head Chef, for proper costing of all food items served in the assigned outlet.
  15. Supervises proper receiving of food as well as proper storage of food and raw materials.
  16. Involved and checks quality of products the staff produced during the shift.
  17. Set up food according to agreed standards.
  18. Ensures that there is adequate supply of food preparation at all times, hygiene and sanitation are observed in all the kitchen area and tools and equipments are handled, maintained and used properly.
  19. Works closely with Subordinates and participates in their functions to develop their working knowledge.
  20. Makes “Expo” during the service announce new orders, pick-up order and expedite food to the proper waiter and table, controls movement of un authorized personal in the kitchen during the absence of the chef.
  21. Check all “Mise en place” is fresh according to section list during the absence of the chef.
  • Checks all requisitions, transfers and inter kitchen requisitions during the absence of the chef.
  • Checks daily staff attendance during the assigned shift.
  • Checks physical aspects of kitchen area, dry store & stewarding during the assigned shift and the absence of the chef.
  • Develops a par stock for kitchen inventory and effectively order against list, after referring to the Head Chef.
  • To be present in the kitchen at all times of his duty supervising and assisting in production by rotating on all sections maintaining quality control and smooth run of the operations. However, moving outside the kitchen for breaks or other purposes should be done in collaboration and clear information provided to the Head Chef/manager on duty.
  • To ensure immediately after opening and before closing of the shop the operational opening and closing sheet in full for the kitchen fridges, sections, stewarding area, preparation area, bar area, dry store and Expo area in association with the manager on duty and to report daily it to the Chef/ Store Manager.
  • To be team orientated and to be able to cope with high volume of business.
  • To attend training as set by the Head Chef.
  • Carries out other duties that may, from time to time be assigned to him / her by the Chef or Shop Manager.
  • To be aware of his / her kitchen team member’s job description and team member’s handbook.
  • Should be aware of Fire and Safety procedure as per the lost and prevention policy and procedure.
