Summary:
He leads, manages and organizes all aspects of food production to the highest professional standards and in accordance to the standard operating procedures. He is further responsible for proper sanitation in the production area, well stocking, proper storage, intra-department coordination, working and vacation schedules, food sales program, quality control and production cost calculations.
Responsibilities
- He is personally responsible for training and giving instructions to his staff in collaboration with the Line Manager.
- The inventory system must be done and checked by the Head chef and reported to the Line Manager.
- Ensures that all the kitchen forms are filled on daily basis.
- Ensures following the operational opening and closing procedure form set by The Brand standards.
- Supervises the food production staff and report any misconduct or any below standard performance immediately to the line manager, Taking necessary and timely corrective actions if needed by the reference and approval of the line Manager.
- Ensures that the reputation and image of the Food quality of the operation is retained and improved at all times.
- Displays at any time utmost creativity in the sales programs, flexibility in customer demands and adaptability to the market by presenting new ideas and getting approval of the line Manager.
- Formulates clear statements of objectives in order to maintain an excellent reputation in the eye of the guests and the staff, by following The Brand standard and by cooperating with the Line Manager.
- Develops realistic action plans aimed to introduce new items for all staff in coordination and approval of the Line manager.
- There are no set working hours for the Head Chef. He is expected to be on duty during normal working hours and whenever his presence is required due to exceptional cases and business. Head Chef working hours should be organized in collaboration with and under the approval of the Line Manager.
- He is compelled to wear the complete and full chef’s uniform at all the time of his duty as per the standard Chef uniform set by The Brand.
- He informs the line Manager and gets his approval for any petty cash purchases in accordance with the policies ruling the proposed items.
- Responsible for the proper communication with the service staff with regards to specials, availabilities, seasonal offers and promotions through the Store Manager and the Manager on Duty.
- Ensures proper scheduling of staff in accordance to the expected work-load. Controls and enforces the set vacation limits. Maintains a performance record of each member of the kitchen staff for assessment purposes in coordination and approval of the line manager.
- Responsible of the production staff evaluations under the observation and in collaboration with the line manager whenever required by the line manager as per the Brand as well the company policy.
- To take full responsibility for the costing of all food items produced by maintaining a proper Cost of Goods Sold as per the percentage range set by The Brand & Management, however, changing of products and purchased qualities or approving of new ones must be done in full collaboration and approval of the Executive Chef.
- To be present in the kitchen at all times of his duty supervising and assisting in production by rotating on all sections maintaining quality control and smooth run of the operations. However, moving outside the kitchen for breaks or other purposes should be done in collaboration and clear information provided to the manager on duty.
- Carries out daily briefings with the production staff.
- Responsible for proper storage of all food items throughout the operation.
- Responsible for the proper receiving procedures of food items.
- To prepare as per agreed shop shipments schedule the full purchase order needed for the kitchen operations from imported meat, spices, sauces or any other items in collaboration with the line manager as per the set restaurant par level, such purchase orders must be approved first in writing by the store manager in order to have it placed and sent to the correspondent person of arranging such orders, record of the purchases and the receiving confirmation should be kept in the restaurant and monitored by the chef in coordination with the store manager.
- To attend the daily management briefing, weekly management meeting and Quarterly staff general meeting, all training sessions requested by the line manager with any other activities related to the store staff outing and team building.
- To be team oriented and to be able to cooperate with high volume of business.
- To be friendly, attentive with positive attitude and always use proper language with a normal and controlled tone of voice and temper during operational hours. To not speak about personal problems, politics or religious concerns.
- To ensure immediately after opening and before closing of the restaurant the operational opening and closing sheet in full for the kitchen fridges, sections, stewarding area, preparation area, bar area, dry storage and expo area in association with the manager on duty and to report daily it to the line Manager.
- Carries out other duties that may from time to time be assigned to him by the line Manager.
- To be aware of his / her kitchen team member’s job description and team member’s handbook.
- To perform the yearly evaluation of Culinary Team members & make sure a PDP/PIP’s are in place.
- Maintain the highest food quality all the times without compromise. If ever any food specification revision, needed the Executive Chef approval before to proceed.
- Should be aware of Fire and Safety procedure as per the lost and prevention policy and procedure.
