Role Purpose
Lead staff in the efficient and profitable operation of the restaurant while maintaining our reputation and culture. Particular focus is required on the training, development and implementation of procedures as directed by the Restaurant Manager and to act as an effective link between senior management and the staff.
Role Attributes
This person must feel comfortable as a mentor and coach and should be very diplomatic and customer focused. They should be concerned about issues being resolved rather than in having their point of view heard and obeyed. This person is sensitive to the needs of the business and the welfare of the staff in the restaurant. They act as a channel between the Restaurant Manager and the operations staff and need to be impartial and level headed with no tendencies towards favouritsm or discrimation in any form.
Operational, Financial and Functional
- Scorecard is completed monthly and accurately reflects general staff's performance.
- Operational costs stay within budgeted guidelines.
- Restaurant supplies and stock levels are managed on a monthly basis. Accurate stocktake figures are completed as per company requirements.
- Procedures are consistent and followed accordingly and are understood by all staff.
- Ensure that equipment is maintained, all cleaning procedures for the equipment are followed accordingly, and any damage is reported and logged.
- Promotions are effectively executed according to Marketing department specifications.
Leadership, Management and Growth
- Contribute to management & department meetings.
- Staff feedback is responded to immediately , constructively and documented accordingly.
- Keep the Restaurant Manager up to date with relevant issues in the store and get their input and advice where necessary.
- The disciplining of staff is conducted in line with company disciplinary procedures and always with Restaurant Manager knowledge.
- The behaviour of all staff members is consistent with Company values.
- All staff receive standard and ongoing training.
- Conflict between staff members within the store is resolved effectively and timeously.
- checklists, rosters, inventory, banking, reservations and staff allocations.
- Local health and safety regulations maintained and followed up including restaurant cleanliness and staff/customer safety.
- Active and involved management of the restaurant during service and particularly over rush periods.
Customer and Relationships
- Ensure that customers have an exceptional dining experience.
- Customer complaints are handled efficiently and resolved effectively.
- Knows each VIP by name and visits their table when in the restaurant.
Innovation and Improvement
- Uses results from Mystery Diner and other feedback to address training needs.
- Visits competitor restaurants and tradeshows to stay connected to new industry trends.
