General Description
The Assistant Coffee Roaster Tier II / Head Roaster is responsible for making sure that the roastery will be operational and functional in its operational hour. He ensures quality and consistent coffee roasting procedure and production as per the brand standard. He maintains roastery operational tasks and checklists to deliver the best cup of coffee the first time all the time.
Job Scope and Responsibilities
- Expert to do cupping in general (measuring, grinding, water quality and temperature, ratio) and grade the cup quality (taste, mouth feel, consistency, etc.)
- Capable to start the coffee roasting process without supervision with strict compliance in the standard of roasting (preheat, starting the roast according to the profile, profiling the coffees in efficient and correct way, blend ratio, cooling time of the coffee, etc)
- Competent to identify the quality of the green beans such as but not limited to moisture percentage using Sinar Moisture Analyzer, maintaining the roastery temperature and humidity as per company standard
- Able to roast at least 6 batches of roasted coffee per day and scale up as per business needs
- Strong core barista skill to check the single origin coffee and blend coffee taste and quality based on brand standard
- Know-how and technical hands on usage of sample roaster (Ikawa)
- Sensory expertise to evaluate coffee cupping on daily basis
- Complete coffee shop orders and coordinate delivery to the respective stores
- Store Quality control checks by checking the espresso and calibrate as per brand standard (if not calibrated, he is able to correct if necessary), check the stock of filter coffee and recommend to the Lead Barista to roast in Tornado King
- Sound knowledge and know how in coffee equipment calibration (espresso, filter, roasting facility and software (Cropster), grinder, etc)
- Understand the process in cleaning and maintaining the roasting facility (Probhat etc)
- Arrange wholesale order and identify and complete each client’s order and needs
- Able to provide post-sale training to the wholesale clients (barista training, merchandise training, etc)
- Oversee the par level stock and the needed equipment’s and facilities in roastery (stationery, gas refill, packaging etc.)
- Able to understand the roasting graph on Cropster for consistent roasting result
