• Prepare recipe costing in coordination with F & B team.
• Review and maintain all recipes and ensure all menu items have recipes.
• Monitor cost of menu items.
• Provide recommendations on cost savings.
• Review purchasing invoices received from restaurants and kitchen and update and close them in the system.
• Participate in inventory taking for food & beverages, general supplies and operating equipment.
• Perform spot checks of inventory.
• Prepare cost reports
• Variance analysis for food and beverage costs
