The main scopes of the work is minimize the cost in all areas were possible; without affecting production ability and/or quality. In addition, this position scope is to be fully aware of forecasted business and targeted profitability whilst maintaining standards.
 
Main Duties and Responsibilities:
- Implementing and Establishing Costing Automated through System and Standardizing the Recipe costing.
- Coordinating and work closely with other departments to meet the cost control objectives and develop and implement strategies to minimize the cost/expenses.
- Managing Food and Beverage Cost at budgeted levels by careful calculation of menu cost as well as Storage of Food products.
- Preventing and detecting fraud related to the receiving, issuing, sales, food preparation wastage and Expiry/Near Expiry Items of Raw Materials.
- Preparing and providing MIS to Management for the accurate figures of Food and beverage cost for catering division as well as other outlets and (Restaurants).
- Planning and supervising the daily operation cost control area, Food and Beverage stores, receiving, and purchasing departments, through guiding and supervising concern personnel in the execution of their assigned task and duties.
- Conducting training and cross - training of assigned personnel so that all personnel is familiar with duties by Job rotation as well as developing strong cost control team.
- Taking complete responsibility and ensuring all required tasks are completed accurately and within given time frames.
 
Tasks and Assignments:
- Ensue that Daily issues, requisitions and receiving reports are entered correctly and on time into the inventory system.
- Check and approve the Menu costing reports prepared by Cost controller and Cost control clerk.
- Daily food cost reports is prepared and distributed according to schedule.
- Walk around the Kitchen to Monitor closely for Preparation Kitchen Wastage.
- Checking all the operational procedure for the Storerooms Followed.
- Ensuring that all Food and Beverage costs are updated bi-weekly, as new prices received by purchasing in all systems and reports as well as checking recipe cost updated.
- Checking Yield test as well as butchery test as per the request of Chef.
- Monitoring the Physical Stock taking in the Kitchen Floor Inventory as well as chiller and Freezer.
- Preparing Monthly Food Flash and MIS along with Complete analysis for Business.
- Monitoring closely for SOE Breakages and Missing and enforcing cost control procedures for the same.
- Performing random test count in the stores.
- Performing Market Surveys once in 6 months necessary amendments will be made standard list of suppliers for Food and Beverage in liaison with the Purchasing Manager, Chef and Financial Controller.
- Checking and scrutiny Monthly Inventory Variance report.
- Checking Expiry Items in stores and taking necessary action.
