• Ensuring the effective flow of work between the component parts of the back of house, stewarding, kitchen on hygiene regulations
• Ensuring compliance with the various policies and procedures on HACCP affecting the operations and its activities
• Ensuring that the routine day-to-day HACCP process managed efficiently, effectively and followed
• Managing the process and contributing to the development of reports local authorities (product sampling, temp. locks)
• Ensure maintenance activities are done on all dish/ glass washers, polishing machines and general equipment.
• Manage and ensure the HACCP/ Allergen/ Pest control process is followed and respected as per set standard
• Perform and demonstrate regular training sessions hygiene standards and guidelines
• Ensure food is rotated with each delivery to maintain freshness.
• Storage temperatures should be checked every day
• Ensure that BOH area is clean & organized at all times
• Ensure BOH areas are kept clean and rodent free.
• Ensure that all BOH staff are following the rules of hygiene (Hair net, gloves, No watches, shaven)
• Take part of daily/ weekly meetings (morning meeting, weekly function meeting, others)
• Ensure employees have the resources, knowhow and tools to complete HACCP
• Motivate staff through positive feedback
• Additional hands on work in any other department might be requested
