Job Summary: To assist in managing the day-to-day operation of the kitchen and ensure that kitchen staff prepare food according to recipes and established standards of quality, hygiene and sanitation and that costs, wastage, etc. are under control Job Description: Assisting the Chef in controlling and managing the day to day operations of the kitchen, ensuring that the preparation and presentation of food complies with the required standards and costs Assisting the Chef in developing food purchasing specifications and monitoring all food production and stewarding operations to achieve the optimum level of food quality, sanitation, safety, and profitability Managing and controlling product delivery and ensuring that only high quality products are received and produced for the guests Ensuring that Company and relevant governmental regulations with respect to safety, grooming and hygiene, etc. are adhered to by all kitchen staff and management Establishing a positive work environment, motivating people to ensure efficient coordination between kitchen and service staff Conducting regular briefings and giving feedback to kitchen staff Providing feedback to the Chef concerning individual kitchen staff performance and turn-over in personnel Conducting preventative maintenance, cleaning, and testing of restaurant equipment ensuring all safety rules and operating standards are adhered to and that the equipment productivity is maximized Ensuring that restaurant's operations are efficient, conducting regular inventory counts, meal and yield counts, monitoring and calculating labor cost, conducting security checks and taking corrective action as required and documenting specific action plans Supervising the cost and quality of staff meals Training and instructing employees in food preparation, cooking and food handling techniques Creating a customer-focused culture and building a team environment in line with GFC's culture and ethics Reporting, attending to and resolving customer complaints, accidents, fire, loss, theft, damage, unfit food or other irregularities Performing other related duties assigned or required by the Chef or Restaurant Manager and acting in the place of the Chef during the Chef's absence The People I need to work with are: Inside My Function: Executive Chef Division Manager Operation Manager Restaurant Manager Outside my Function: Customers Suppliers
