Direct, oversee and participate in all pastry production and operations, to include, quality and presentation of pastries, desserts and baked goods, in compliance with all safety and sanitation standards.
Create and implement new menus and individual menu items for outlets based on current food trends and regional tastes in partnership with Executive Chef.
Prepares and serves items in accordance with established portion and presentation standards.
Maintains accurate counts on all food items prepared insuring no discrepancies in amount of food needed verses amount of food prepared.
Creating and planning innovative daily, weekly, monthly, and seasonal dessert specials and baked goods.
Forecasting dessert and baked good needs on a daily basis.
Inspecting quality of food items used to prepare desserts and baked goods
Controlling food and labor costs within the bakery
Mentoring, training, supervising and coaching all Bakery staff.
